Allergen changeover
The extended, validated clean required when a line moves from a product containing a major allergen to one that does not.
Major allergens — milk, egg, peanuts, tree nuts, soy, wheat, fish, shellfish, sesame, and in some markets others — cannot be allowed to carry over into a product that does not declare them. The consequence of getting it wrong is a recall at best.
So the clean between such runs is not a rinse. It is a full documented procedure, often with swab testing afterwards to prove absence, and it takes the line out of service for materially longer than a normal changeover.
For scheduling this means the order of runs on a line is not arbitrary. Sites generally sequence from fewest allergens to most across a week, which is why the slot you are offered depends on who ran before you.
