What actually moves this number

  1. Cocoa priceCocoa has been extraordinarily volatile. Any figure here has a short shelf life and yours should be re-checked quarterly.
  2. Cocoa percentageA 70% bar uses far more of the expensive part than a 45% one. The number on the front is a cost decision.
  3. Tempering and mouldingChocolate lines are specialised and there are fewer of them, which shows in tolling rates.
